Green, just barely going yellow. If they’re too green, the peel is too hard and hasn’t begun to separate from the banana itself and it’s super sticky when you try to peel it. There has to be a tiny bit of yellow to be perfect.
I only buy 5 max at a time because they ripen way too fast and the sugar is too much. I hate seeing food go to waste, so I’m glad there are people out there who like or use them at all stages.I always go for the green ones too bro. The sugar content is ridiculous at the ripened yellow/black stage.
I cut mine open with a knife instead of trying to peel them.

It seems to me that this black mess in the form of a black banana is only suitable for the trash can.Yeah, really good for desserts/puddings/cakes at that stage but not good for general eating (too sweet and sickly and the ethylene gas makes them taste horrible ).
