When I was cycling I did something similar with maltodextrin and IIRC a little gatorade powder to sweeten it up. A heck of a lot cheaper and easier on the stomach than the goos and premade drink powders. I think I was doing 60g/hr for 2hr rides.

Yes premade drink powder are legalized scams they also have low carbs density
 
Honey, Agave Syrup, Nutella and Peanut Butter

2 tablespoons honey2 tablespoons agave syrup1 teaspoon Nutella1 teaspoon peanut butter1.5 tablespoons water

Errata corrige!
If i am right i wrote that to create the gel the ideal was.mixing fructose and maltodextrin at 1:1 ratio, its not wrong but normal white sugar guess what ratio of glucose and fructose has? Right 1:1 so its even cheaper lol, if u need custom ratios u gonna need maltodextrin/ fructose but i think that by doing tje right math u could get 1:0.8 by adding some maltodextrin
Just other things that were probably wrong
Idk if there is really a limit of absorbtion of carbs by each recepter there is this ineos thriatlete that during ironman did 200g/ that is 60/80 more than the conventional limit but i think that he trained it because limit or not with this amount of carbs ur gonna shit in ur pants if u are not trained
For caffeine if u want to add caffeine to the gel there isnt a problem but keep in mind that absorbtion time is around 45 minutes so calculate that based on ur needs
