That’s interesting. I know if i make a dozen hard boiled, they will stink up my whole fridge with that sulphuric smell. They definitely don’t smell like that scrambled or even over easy. I just never realized there was an actual reason for that directly.

Honestly i dont like watery eggs and that sounds really watery lol

Which is why i do over medium instead of over easy
 
Speaking of eggs , for the longest time I didn’t realize that when you drink egg whites you only absorb half the protein. After asking AI, I was told if I microwave the egg whites for 30 second, that will break down some of the proteins and allow our stomach to digest 100% of the protein but idk how reliable it is

Raw, unheated egg white protein is 50% bioavailable

Pasteurized egg whites are already heated to 130-140f which helps a little

150f makes the protein even more bioavailable

165f gets them to 90% bioavailable
