made some beer batter chicken tonight, the girl loves it, definitely one of my favorites. Used about 10 ounces of bud light lime in the batter. Fried some potatoes too.
I've been on a shish kebab kick here lately. Marinate in Italian dressing for a bit, skewer them with veggies, sprinkle chipotle seasoning, garlic, salt, pepper over top.
Grill em up.
I throw a yogurt based dressing over when done and drizzle sriracha until my tongue tingles.
Take several boneless skinless chicken breasts and cut them into bite-sized chunks. Pour them into a bowl with several whole eggs, milk, and seasoning of your choice. Make sure the egg mix covers everything.
Next take 2-3 bags of Sour Cream & Onion potato chips and ground them into dust. Take your marinated chicken and cover liberally with the chips. Lay them out on a tray.
Bake in over at 350 F until they are golden brown and slightly turning dark on the underside.
Choose your favorite dipping sauce. I prefer A1. It's so freaking good. Quick and easy to make, too.
