I'm.on a tight budget as well, eggs are a staple, cottage cheese, high protein Greek yogurt, bulk chicken from a farm, and pork
I usually get whatever meat is on sale
For carbs sources I'd opt for sweet potato and rice
And a shitload of frozen veggies
I dont know how it is in the USA, but in Canada id get into the grocery store at opening in the mornings. They have lots of meat that was 30% off because it was 24 hours away from its expiration date. I could get ribeyes that i intended to eat that day for 30% off. It was great.
But all that discounted meat is sold by noon, so you gotta get in right at opening. Id go in every morning and get my meat for the day, always the 30% off stuff. I was eating discounted ribeyes daily. Pork, chicken, same deal. But again, the stuff sells fast so you gotta get in right at opening to grab the good deals.
