Bulking help!

Okay so for my entire lifting career ive been eating around 300-400g carbs a day, ~100g fat, and ~250g protein. I have hit a plateau of 205-208lbs now and im on my 8th week of my cycle. Ive been at this weight for like 4 weeks now and was wondering how much more should i eat while staying healthy? When i push carbs to 500g a day my muscles feel very full but is eating that much carbs a day healthy? Can it increase the risk of diabetes? I am 5'7" btw and this diet was first used in march when i weighed 173lbs and it brought me to 195lbs naturally then i hopped on and the gains stopped at 205lbs. Most my carbs come from potatos, sweet potatos, fruits, brown rice, and oats. I was thinking 125g Fat, 500g Carbs, and 250-280g Protein. Could too many carbs also effect insulin sensitivity??
