So One place is saying a 4 oz chicken is 26 grams protein and another is saying its 36 g of protein.
What do you guys put a 4 ox piece of chicken at?

21 for skinless thighs, 28 for skinkess breasts. According to MFP. Idk i usually just go by what their listing is and it has served me pretty well so far.
 
really depends if it's 4 oz cooked or 4 oz raw - if it's 4 oz raw then it can easily lose up to an oz after cooking it, maybe even more if it's a sodium/water pumped chicken. It's probably closer to 28 grams if we're talking cooked, boneless and skinless.

I thought the question is about grams of protein per ounce of chicken not the mass conversion of Oz to grams?

what I meant is if you read 28 grams of protein in 4 oz of cooked chicken, that's 7 grams of protein per ounce. Usually food labels have nutrition info based on uncooked mass if you're buying the product uncooked but a random Internet source might be referring to cooked, they aren't interchangeable). So if you read 28 grams of protein for 4 cooked ounces (which sounds right), but you measure 4 oz of raw chicken and cook it, the cooked mass might be about 3 oz after water and fat are removed during the cooking process, so in actuality it may only be 21 grams of protein now (7 grams per cooked oz times 3 ounces).

Basically you need to make sure that the protein content per oz that you're relying on is being measured in the same form (raw vs raw or cooked vs cooked) but not interchanging them

All animal meat protein comes in at 7g protein per 1 oz of meat
Excluding mechanized or processed foods due to filler and what ever else
