stay away from cuts like prime rib, and ribs, rule of thumb, the farther from the ground the cut is, the leaner it is (ie, rump and shoulder) also happens 2 b the toughest, but its a trade off
leanest cuts of beef are flank, rump roast, filet mignon, and anything from the shoulder clod, the shoulder and rump have more sinew so its going to be ALOT tougher than filet mignon, but its also much cheaper
best cut of beef in my opnion is chuck steaks, can get them for like $3.99/lb, much more flavorful than filet and rib, and much more leaner than rib, but also alittle on the tough side
what are your thoughts on duck, turkey, pork, buffalo, ostrich?
duck yeah, is greasy, but not all animal fat is bad fat, in all actuality, duck fat is the best animal fat for you, and when its cooked right, its not greasy at all
turkey is very lean, especially the breast meat
pork is "the other white meat", jsut stay away from ribs, and bacon, best cuts are loin and tenderloin
buffalo is much better than beef, lil bit more pricey, but its leaner, kinda taste like a gamey beef
ostrich is like 98% fat free, taste like beef, but much more juicy, so juicy in fact, that it drip down your chin when you eat it
if your going with ground beef, go with 90% lean, but id rather make my own by buying chuck or rump and buzzing it in the food processor, what do you think supermarkets do with pastdue beef that doesnt sell? duh, they grind it up for hamburger meat, give the meat another week to sell
