Lentils

I've been eating lentils faithfully for a little over 5 months now and it seems they have done wonders for my GI tract in terms of keeping me regular. The little fiber allstars kickbutt in my opinion. That and the folate content is just a major reason in itself to consume these little legumes.

How do you prepare them?

That may be the best part. They are the most simple bean or legume to cook. You can even quick cook them 3 minutes in the microwave. Boiling works best in my opinion to release the phytates. Phytates are found within beans and legumes and can bind to nutrients while moving through your digestive system causing deficiencies. They cook very fast.
