Bulk egg whites brands?

Only you can decide if it's more cost efficient than throwing away all those yolks. I see them in half gallon containers at every grocery store I go to. I don't know about brands.
 
I make my own. Some yolks I eat. You have to (HAVE TO) par-cook the eggs at 142F for 4 mins. I heat to 143 for 5 just to make sure.

Otherwise the egg whites are only 50% bioavailable. Do this par-cook and they are 99% bioavailable. These treated eggs appear completely raw and you can cook them, drink them as-is, bake a cake or whatever

So my oven only goes as low as 170°. If I put my eggs in that oven for 3 minutes at that temp, is it still good or should I lower my time?

I don’t think so, since you’re heating with air, it will take a lot longer to come up to temp. In the water bath I use, the water conducts the heat much better.

I’m not sure how you’d do this in an oven.

I buy them in bulk of 60 to a box, so they come in their own “paper” cartons and I just put them in the oven. I questioned if they were even in there long enough since they were still cold to the touch.
 
I have an induction top (electric, sorta)

the large volume of water keeps the temps easier to manage. That’s why I use such a big pot. It doesn’t take long so I can sit and watch the temps with a probe thermometer
