Found a couple of interesting articles on the effects of nitrate supplementation (via consuming beetroot juice) on exercise (resistance and endurance).

Beetroot supplementation demonstrated improved VO2 max, faster 5km run times, improved time to exhaustion in elite level runners, and improved velocity, power, and increased total reps in bench press activity.
Pretty cool food for sports even if it does turn your pee purple.
